Ultimate Chicken Casserole
Looking for easy and quick dinners for busy school nights? This Ultimate Chicken Casserole has simple ingredients you may have in the freezer and pantry, such as egg noodles, bacon, cream of chicken soup, frozen corn, rotisserie chicken, fried onions, and shredded cheese.

Ingredients
- 3 cups egg noodles
- 6 slices of bacon diced
- 2 cloves garlic minced
- 1 cup onion diced
- 2 10 oz. cans of low sodium cream of chicken soup*
- 1 1/2 cups half n half
- 2 cups frozen corn**
- 2 cups cooked chicken diced or shredded***
- 1 cup cheddar cheese shredded
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups French fried onions
Instructions
Preheat oven to 350 degrees F. Cook noodles al dente according to package directions and drain. Heat a skillet on medium-high and then add the diced bacon. Cook until crispy, then remove to a paper towel to drain off grease.
Next, remove all but 1 tablespoon of bacon grease from the skillet, add in the diced onion and garlic to the bacon grease, and cook for 2-3 minutes until softened. Remove from heat and set aside.
In a large bowl whisk together the cream of chicken soup and half n half until combined. Fold in the remaining ingredients, except for the fried onions, and gently mix them.
Pour the mixture into a 9x13 baking dish and sprinkle the French-fried onions on top. Place in the preheated oven and bake for 30 minutes or until hot and bubbly.
Notes
* Cream of celery, cream of chicken and herbs, or cream of mushroom soup can be substituted for the cream of chicken soup.
**Instead of corn, try frozen peas or a blend of peas, carrots, and corn.
***Leftover rotisserie chicken is great for this recipe.
Serve with steamed green beans or broccoli and tube crescent rolls or biscuits for a delicious, hearty meal. The leftovers are even better.
