Cooking directions
- In a 4-quart pot bring the broth to a boil. Reduce heat and stir in the soup mix and chicken.
- Return to a simmer, cover and cook for 15 minutes.
- Next, stir in chopped celery or fennel and lemon juice. simmer covered for 10 minutes.
- Add salt and pepper to taste. Serve with grilled cheese or a piece of French bread and enjoy.
- Makes about 8 (1cup) servings
Additional items needed to make the chicken rice soup
- 8 cups (64 ounces) of chicken broth
- 2 cups of cooked chicken breast cut up (10 ounces)
- 3 stalks celery sliced or 1 bulb fennel chopped
- 1-2 tablespoon lemon juice
- Salt and pepper to taste
