Cooking directions

In a 3 or 4-quart pot, melt butter and gently sauté mushrooms (and meat, if using) over medium heat for 5 minutes.
Stir in the vegetable seasoning packet of soup mix.
Add broth to pot and bring to a boil. Then reduce heat to a simmer, covered for 20 minutes.
Next, add black pepper to taste and serve with a crusty bread and enjoy.
Makes about 6 servings.

Additional items needed to make the mushroom barley soup

½ to 1 pound sliced, fresh mushrooms (any variety)
2 Tablespoons. butter or margarine
6 cups chicken or vegetable broth (48 ounces)
Freshly ground black pepper, to taste
Optional: ½ lb. ground beef (chuck or round) or crumbled sausage if desired.
