Pennsylvania Woodlands Mushroom Barley soup uses a shiitake mushroom, onions, carrots, bell pepper, barley, seasoned with nutmeg, mustard, and thyme. This classic soup is a wonderful alternative to store bought cream of mushroom soup that can be prepared in just 30 minutes.

Cooking directions
- In a 3 or 4-quart pot, melt butter and gently sauté mushrooms (and meat, if using) over medium heat for 5 minutes.
- Stir in the vegetable seasoning packet of soup mix.
- Add broth to pot and bring to a boil. Then reduce heat to a simmer, covered for 20 minutes.
- Next, add black pepper to taste and serve with a crusty bread and enjoy.
- Makes about 6 servings.
Additional items needed to make the mushroom barley soup
- ½ to 1 pound sliced, fresh mushrooms (any variety)
- 2 Tablespoons. butter or margarine
- 6 cups chicken or vegetable broth (48 ounces)
- Freshly ground black pepper, to taste
- Optional: ½ lb. ground beef (chuck or round) or crumbled sausage if desired.
