This enchilada soup mix boasts a robust southwestern taste, featuring dehydrated white beans, diced peppers, sweet potato, and chili spices. To prepare this delicious soup, simply incorporate chicken and salsa for a meal free of gluten.

Cooking directions for the Enchilada Soup Mix
- In a 3 to 4-quart pot, bring 6 cups of chicken broth to a simmer.
- Reduce heat and add contents of the Soup Mix, 1 cup Salsa Verde (or green chili enchilada sauce), and chicken.
- Return to a simmer, cover, and cook for 25 minutes. Remove from heat.
- Add the shredded cheese and serve with a lime wedge garnish. Or, for a creamier version, stir in sour cream and enjoy.
- When reheating this soup, keep temperature low to avoid the cheese sticking to the soup pot.
- Makes about 8 servings

- 6 cups of chicken broth
- 2 cups of cooked chicken that is cut up into pieces
- 1 cup of Salsa Verde or green chili enchilada sauce (choose mild, medium or hot)
- 1 cup of shredded Monterey Jack or cheddar cheese
- 1/2 cup of sour cream is optional
