Tomato Basil Bliss—Elevated the Southern Way

Just stir in chicken or vegetable broth, silky tomato purée, a sprinkle of brown sugar, and a splash of cream, and you’ll have a bowl that tastes lovingly slow-cooked… yet is ready in about 35 minutes.

Homemade in minutes and serve

Cooking directions:

• • In a 3 or 4-quart non-aluminum pot bring broth to a boil. Reduce heat and stir in the vegetable seasoning packet from soup mix. - Aluminum reacts with the acid in tomatoes and may cause a metallic taste.
  • Return to a simmer and cook for 20 minutes.
  • Add the tomato puree and brown sugar, stir and return to a gentle simmer, covered for 10 minutes.
  • Reduce heat and slowly stir in the cream. Cook uncovered at low heat for another 5 minutes. Serve with a crusty bread and enjoy.
  • Makes about 10 servings

Additional items needed to make the tomato basil soup:

• • 6 cups (48 oz.) of chicken or vegetable stock 
  • 1 can (29 oz.) of tomato puree 
  • 2 tbsp. Brown sugar
  • 1 cup light or heavy cream 

Serve with a grilled cheese sandwich, Vermont Beer Bread, or more elegantly with shrimp and feta cheese
