This easy-to-make dry mix is brimming with tender potatoes, savory herbs, and rich seasoning, all blending into a smooth, velvety soup that feels like a hug in a bowl. Inspired by the kind of stick-to-your-ribs meals enjoyed after a day outdoors, it’s hearty enough to be the star of any meal.

Just add a large russet potato, broth and some heavy cream, then pile on your favorite fixings—crumbled bacon, shredded cheese, green onions—for a fully loaded experience. Whether you’re winding down from a hike or simply craving a cozy dinner at home, this soup delivers the rustic charm and flavor of a homemade classic.

Cooking directions:

• • Slice uncooked bacon into half-inch pieces, then place in the bottom of a four quart pot.
  • Sauté bacon over medium heat until crispy for about 8-12 minutes. 
  • Remove bacon from the pot, set on a paper towel, and discard excess bacon grease, but leave the bacon bits.
  • Peel and cube potatoes into half-inch cubes for about 2 cup, and add to the pot. Toss the potatoes with the residual bacon grease and bits, then add the chicken broth, and bring to a boil.
  • Stir in the Rocky Mountain Trail Loaded Potato Soup Mix. Return to a simmer, cover, and simmer for 30 minutes.
  • Stir in the heavy cream. Heat uncovered on low for 5 minutes.
  • Serve with crumbled bacon, shredded cheddar cheese, and green onions.
  • Makes about 8, 8 oz. servings

  • 1 large russet (baking) potato or other white potato
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
