 Cooking directions:

    • Pick through the split peas. Remove discolored, shriveled split peas and any foreign material. Rinse well.
    • Cut bacon into ½ inch pieces and sauté for 10 minutes in a 4-quart pot until crisp (or place ham bone in pot).
    • Stir in contents of vegetable & seasoning packet first, then add split peas and broth to pot.
    • Bring to a boil, reduce heat, simmer covered 2 1/2-3 hours; stir occasionally.
    • To thicken: let soup cool or continue simmering without lid.
    • Just before serving add sherry, if desired. Salt and pepper to taste.
