Going to the grocery store was always a big event when I was a young child growing up in rural Pennsylvania. Getting to pick out one favorite item each time is still one of my favorite memories. I would alternate between Kraft Mac and Cheese, Manwich Sloppy Joes, and of course, the little glass jar that contained chipped beef. I will always remember taking the old church key and poking a hole in the top of the lid and hearing that sound of the seal breaking. My job was always ripping up the little round chipped beef that was rolled into the jar. My Mom or Grandma would be over at the stove with a pan boiling to rinse the chipped beef before mixing it with the gravy. Some members of my family would eat it on toast, others mashed potatoes, but for me, I would just eat it on my favorite Lassie plate.
Although my Lassie plate is long gone, to this day, I will make myself a plate of the chipped beef and eat it the same way as I did as a child.

Ingredients
- 8 ounces dried chipped beef, sliced into strips
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 3 cups whole milk
- 1/4 teaspoon black pepper
- Pinch of garlic powder (optional)
- Toasted white bread or biscuits for serving
Instructions
- If the chipped beef is very salty, rinse it briefly under cold water and pat dry.
- In a large skillet over medium heat, melt the butter.
- Stir in the flour and cook for about 1 minute, whisking constantly to create a smooth roux.
- Slowly pour in the milk while whisking to prevent lumps.
- Continue cooking until the gravy thickens, about 4–6 minutes.
- Add the chipped beef and black pepper. Stir well and simmer for another 2–3 minutes.
- Spoon generously over toasted bread or warm biscuits and serve hot.
Tips for the Best Creamed Chipped Beef
- For a richer flavor, use whole milk instead of low-fat milk.
- Serve with potatoes or scrambled eggs for a hearty farmhouse breakfast.
- Some families add peas or a dash of paprika for extra flavor.
- Leftovers can be reheated gently on the stovetop with a splash of milk – Leftovers? There was none of that ever at our house.
